A simple recipe is the potatoes, sliced into fry shapes, fried, then sprinkled with salt
but we are going to elevate out fries.
For a crisp exterior we are going to do a presoak and dry to help get them super crisp.
Serve 4-6
You Will Need
4 Large Potatoes
Vegetable oil (To fill halfway up a pan or deep fryer)
Water
1Tbsp = 1 tsp Salt
1 Tbsp Sugar
Slice your potatoes into fry shapes (whatever size you like) and add them to a bowl.
Cover the potatoes with water and add 1 Tbsp of sugar and 1 Tbsp of salt to the
water.
Leave the Fries to soak for at least two hours in the water in the fridge (You could do
this the day before, it will pre season the potato and help with the texture).
Drain and rinse the potatoes and pat dry with a clean towel or kitchen paper.
Meanwhile, bring your oil to 190oC.
Make sure your fries are extra dry then fry in batches until lightly golden. This will
take around 5-10 minutes.
Remove the fries to drain on paper towel or on a rack over a lined tray.
As you take each batch out of the oil to rain, sprinkle them with a little salt.
To jazz up the fries you could sprinkle the fries with some
cajun seasoning, or a little rosemary, garlic and parmesan.
